Chitimacha Baked Duck
Recipe by Leroy and Dora Burgess, Chitimacha
2. pats of margarine to cover (depending on number of ducks)
3. Salt and pepper to taste
4. Following to taste (depending on number of ducks)
[Leroy gets the ducks. Dora cooks them.]
Place cleaned ducks in large pot. Add salt and pepper, onion, bell pepper, celery and garlic (to taste).
Cover with water and gently boil ‘til tender.
Heat oven to 350°.
Remove ducks from water. Place in baking dish. Put pats of margarine in and on the ducks. Bake ‘til brown, approximately 15 minutes.
